Chicory

Chicory, sometimes called the blue daisy, is a plant that has many uses! Its leaves and flowers can be added to salads, or its roots can be dried and added to many foods and drinks. Most famously, ground chicory root can be added to coffee for its unique woody and nutty flavor.

Chicory is used for loss of appetite, upset stomach, constipation, liver and gallbladder disorders, cancer, and rapid heartbeat. Chicory root has a mild laxative effect, increases bile from the gallbladder, and decreases swelling. It is also a rich source of beta-carotene.
